Pineapple juice is one of my favorite winter drinks, but it's pretty sweet stuff. In this combination, mixed with a little fresh apple juice, cranberries add their tartness, plus a fun bright pink color.
The color fools you momentarily: this looks like it could be watermelon juice, but as soon as you sip, it's the tangy pineapple that greets your tastebuds.
One nice thing about juicing a pineapple is that you don't need to core it. Just remove the leaves and tough skin (don't worry if you don't get all of the eyes removed) and quarter, leaving the core in. Your juicer will sort things out.
Got leftovers? While this is intended as a morning juice or afternoon pick-me-up, it would be completely at home in a cocktail glass. Try a little rum or tequila (start with about an ounce and taste as you go if you're adding more.)
