Melon-Mint Smoothie Recipe

For me, melon with a squeeze of lime is the perfect way to start the morning: mellow and sweet, brightened up by the tart lime. A dish of yogurt alongside and I'm good to go. It's the kind of breakfast that satisfies a craving for sugar without the pastry-weight that'll have you crawling back into bed.

This smoothie captures those flavors in drinkable form, bringing cantaloupe together with a little lime juice, yogurt, and fresh mint. When we get to summer you won't need to sweeten this combination much; for now, have your honey on hand and adjust to taste depending on the ripeness of your cantaloupe.

Many smoothies need added liquid, but because cantaloupe is so juice, this one thins out fine without including any. You might need to scrape down the sides of your blender once to get it all mixed up, depending on the strength and speed of your machine.

Ingredients

  • 1 tablespoon fresh lime juice, from 1 lime
  • 2 cups cubed ripe cantaloupe, from about half a medium melon
  • 1/2 cup plain yogurt
  • 10 mint leaves, plus more for garnish if desired
  • 1/2 to 1 tablespoon honey (adjust to taste)
  • Pinch salt
  • 2 ice cubes

Directions

  1. Add lime juice, cantaloupe cubes, yogurt, mint, honey, salt, and ice to blender. Blend until completely smooth, about 30 seconds. Serve immediately, garnished with mint if desired.
