The Whisler's team infused a chai tea blend into Buffalo Trace bourbon to create an aromatic base for this cocktail, sweetened with honey ginger syrup and balanced with fresh lemon juice.
Lawnmower Man ($8)
During construction, bartender Mark (formerly of Peché) had to get a side job mowing lawns. The Whisler's team named this sweet and spicy drink after him. El Jimador Blanco is shaken with a spicy pequin pepper jam and Fire and Damnation Bitters for smokiness. Maine Root ginger beer adds zing and carbonation.
Beet Down ($10)
For this play on the Negroni, Fords Gin is infused with local beets and stirred with with Cocchi Americano and Campari. The earthy result finishes with subtle bitterness on the back of the palate.
Ruby Fizz ($8)
This summer cocktails is made with Tito's vodka, freshly squeezed Texas red grapefruit juice, and honey-lavender syrup, topped with a splash of rosé wine.
This stirred, herbal drink made with cognac, sweet vermouth, Benedictine, Angostura and Peychaud's bitters gets a lingering smoky side from Forever Oax Mezcal Reposado.
East Side Hero
As a challenge, Cesar G. Aguilar created this off the menu cocktail on the spot. He combined Mezcal Vago with a grapefruit peel-cinnamon syrup, Cocchi Americano, and squeeze of grapefruit juice. The result is juicy yet savory, with just a hint of smoke.
