There's pretty much nothing wrong with a perfect Pimm's Cup, and we tend to divide the year into Pimm's Cup Season and sad, cold Non-Pimm's Cup Season. The Pimm's Cup is refreshing on a hot day, plus it's easy to make in a big batch, and it rewards a little creativity and garnish-related improvisation. But if you have a whole bottle of Pimm's No. 1 and you've drunk a Cup or four already, you might start to wonder what else you can make with it.
Over the past few years, we've done a little experimentation. Kenji came up with the Pimmlet, a Pimm's-seasoned Hendrick's gin gimlet served in a cocktail coupe, and shared a recipe for The Rookie Highball, an Irish Whiskey highball made with a little Pimm's, plus lemon and Angostura.
