There are more small soda brands than ever these days, and more restaurants and bars making their own, too. But there are still plenty of flavors that don't exist on any scale. And that got us thinking: Which sodas should start showing up in bottles?
I asked the Serious Eats team, and they had these suggestions...
I'd love a good blueberry soda, if it really tasted like blueberries (I had one once at Brooklyn Farmacy and it was amazing). Generally, I'd love more fruit sodas that really tasted like fruit. Oh, and didn't cost too much money. A guy can dream, right? —Ben Fishner

I'm drinking bitters-spiked soda water like a fiend. I would love a minimally (or not at all) sweetened bitters fizzy drink on the market, perhaps with a bit more body, both for those slow sipping times and for when I need to guzzle something really refreshing. —Max Falkowitz
I wish there was sour cherry soda or strawberry rhubarb soda or peach soda that actually tasted like a ripe peach, with the right balance of sweetness and acidity. Is that too much to ask? —Ed Levine

It's funny, tart cherry is definitely high on my list. Also maybe something with lemongrass? Or an Earl Grey tea soda? Would that be awesome or awful? —Carrie Vasios
Personally, I don't mind totally synthetic flavors in my soda and would love one that tasted like a Blue Raspberry Slush Puppy—"blue" is by far my favorite color-taste, in totally-made-up flavor land. (Actually, a recent Mountain Dew special flavor came pretty close... but I'd want it in a diet version.)
