Vancouverites held our breaths as the historic Rosewood Hotel Georgia (which first opened in 1927) was unveiled in 2011 after four years of reconstruction. Food lovers' eyes fell on chef and owner, David Hawksworth as he stepped up to the biggest challenge in his career. Brad Stanton also knew a substantial task laid ahead of him when Hawksworth brought him on as the bar manager. A year later and with numerous awards under their belts, it's safe to say that their dream is coming true. The cool and polished bar is now a hot spot for travelers and local folks to congregate. The beverage program draws cocktail lovers from around the city.
Coinciding with Vancouver's obsession with seasonality, Stanton restyles the bar menu every few months. He incorporates fresh juices, housemade infusions, and bitters, even going so far as to bring in herbs from his own backyard.
The current summer menu includes several pre-Prohibition staples along with icy and juicy sippers. He combines sunny fruits like blueberry and tangelo with earthy and floral elements such as lavender and matcha. He offers 'zero proof' cocktails for those who don't drink spirits; feel free to add your own booze if you're looking for something stronger.
