Just what the doctor ordered.

Don't underestimate Marfa. This small town in western Texas may boast less than 2,000 residents, but it has a ton of great restaurants. Cochineal, which is is known for its daily-changing dinner menu, is one of those spots. If you're in town overnight, stop by for its less-advertised breakfast, and order the migas ($7.75).

While many versions rely on greasy eggs or fried tortillas for flavor, Cochineal presents a large pile of gently scrambled eggs tossed with wide, soft strips of corn tortilla. What really sets these migas apart from others I've had is the quality of the vegetables. Cochineal has its own garden, and they put it to good use. The eggs are tossed with big pieces of juicy tomato, crisp red and green peppers, and deep purple onions. That's not to say that you should ignore the side cup of jalapeno-tomatillo salsa—in fact just pour the whole thing over your plate.

This is a hearty, well-executed plate of food. Especially with the side of refried beans, this is the kind of hangover helper that will fill you up but not weigh you down. The unlimited coffee doesn't hurt, either.
