I may not be man enough for this wine—this German riesling is for acid-lovers only. It's concentrated and tart enough to get your teeth tingling—think of the sourest Granny Smith you've ever had, melted down. Though the acid dominates, there's more stuff to this intense wine: fennel, lavender, and thyme, hints of apricot and slightly unripe pineapple.
Serve it with grilled pork chops or better yet, a BLT. This wine could clearly cut the fat, and the green-herb notes will be right at home.
Look for Strub's 'Soil to Soul' Riesling, too.
