A dry Austrian sparkler made from riesling, precise and stony. We tasted gravel and grapefruit pith—it's tangy but also a little bit bitter (some tasters were reminded of the peppery bite of arugula or endive.)
The bubbles are delicate and fine (the producer says the wine goes through 'traditional bottle fermentation') and there's a peachy-lemony finish, but this isn't a big vivacious bubbly, and it isn't for those who like their wines fuller and more fragrant. Serve with sushi—or host an elegant brunch and pour this stuff with creamy scrambled eggs and caviar.
