July is riesling month! We're drinking it all month long...and maybe longer. Got a favorite riesling? Recommend it in the comments!

This is not a wine that pushes itself onto center stage—it's gauzy and light at 8% ABV, with a slight prickle on the tongue. The scent reminded us of freshly pressed cider ("illuminated apple juice," said one taster after a sip).

Everything about this wine is delicate: feathery fruit, hints of radishes, apple skins, a delicate spritz of acidity, and as it fades in your mouth, gravel, river rocks, clover. It's not a show-off, not one for those looking for teeth-bleaching acids and wild mouthfuls of slate. If you tiptoe in, though, it's like standing inside a glass pear. You can see out, but it's frosty.

Drink it with a plate of cucumbers and other raw vegetables, a spoonful of salmon tartare, popping beads of roe, maybe sushi.
