Smoothie? Not quite. Fruit juice? Not really. There's no one category that quite fits these whey-based tonics from White Cow Dairy ($4 per bottle) sold at Murray's Cheese in New York.
These drinks have a touch of creaminess and a significant tang. With five flavors including lime and tumeric, my favorite is the lemonade (pictured above). Yogurt whey and yogurt solids serve as the base for this bright, invigorating drink, made puckery-sweet with lemon juice and a sprinkle of maple sugar. The drink is infused with fresh mint leaves, leaving a crisp, clean finish on the tongue. Don't forget to give the bottle a good shake before drinking, the tonic separates quickly.
