Necessity is the mother of invention, and the day after the James Beard Awards, I was definitely in need of a hangover cure—in a major way. Thus was born the Jalapeño-Chipotle Slider.
It's got all four of the major hangover-cure food groups:
- Fat instantly soothes your gut and quickly fills the aching hole left by last night's last drinks. This slider's fat comes in the form of both freshly ground 70/30 beef (in this, case, it's 100% well-marbled short rib), as well as in a chipotle crema (I used Mexican-style soured cream, but you can use regular sour cream thinned out with a touch of milk if you'd prefer) and of course, gooey melted American cheese.
- Carbs are essential for the energy boost your system needs to climb over the next hurdle. Here we have a steamed soft burger bun (I'm using Wonderbread), flavored with the heady aroma of a well-grilled onion.
- Heat is required for clearing out the sinuses and giving you the mental punch in the head necessary to clean yourself up. It comes in the form of pickled jalapeños and smoky chipotle chiles blended into the sauce.
- Pickles provide the salt and valuable electrolytes necessary for proper ion exchange across cellular membranes or something like that. Whatever the Gatorade people tell you. The pickled jalapeños serve double-duty in this front.
And yes, despite its large size, I am calling it a slider because it's got beef and buns steamed over onions, and when you're hungover enough, spatial and dimensional relations are all wonky anyway.
