In the glass Funkwerks White presents a near-perfect image of a Belgian Witbier. Its hazy, pale lemon body supports a big, pillowy white head. The beer, one of the initial offerings from the Saison-focused Fort Collins, Colorado, brewery, was created using all organic ingredients.
Bright citrus and yeast aromas are big up front, along with whiffs of wheat. Additions of grapefruit and orange zests are amplified by the brewery's Saison yeast. Slightly spicy Opal hops, ginger, coriander, and chamomile work together and are balanced in both flavor and aroma. No one element dominates. The characteristic sweetness found in many Belgian Witbiers is muted here, replaced with a pleasant acidity. This beer lands on the spicy and tart side of the style.
Flaked oats and wheat create a smooth creaminess in the body before finishing dry. Drinking Funkwerks White makes me wish it was hot outside. At 5.5% ABV, it's very easy drinking and incredibly refreshing. I'd pair this with lightly dressed greens and goat cheese.
