Ian Scalzo and his partners at Tradition (the same folks behind Bourbon and Branch and Rickhouse in San Francisco) have been busy. They opened Local Edition just a few months back, and now have followed up with a spot that's essentially eight bars in one. "It started as a 'drinking through the ages idea,'" said Scalzo, "but we really wanted to focus on different types of bars, and how each has their own style."

The folks behind Tenderloin speakeasy Bourbon & Branch and Financial District punch destination Rickhouse have become synonymous with serious cocktail-making in San Francisco. So when word got out that the purveyors of some of the city's best drinks were opening a new bar downtown, we were all ears.
When asked how he is inspired to come up with new drinks, Bourbon and Branch bar manager Ian Scalzo says, "Cookbooks. I look for flavor profiles that I can accomplish with booze, and map it out from there." The drinks almost all use fresh herbs and spices, often in combinations rarely seen outside the kitchen. You'll find these cocktails have a remarkable freshness and fullness of flavor.
