Feminine Mystique ($8)
A last call on Bing cherries before fresh ones fade out for fall, the fruit is joined by Jim Beam Bourbon, Aperol, fresh grapefruit juice, sage, and house sour mix.
Mother’s Helper ($8)
As house-made kombucha begins its slow crawl to full-fledged bar trend, Percy’s employs it sparingly. Here, theirs is mixed with sage-infused gin, sour mix, and juiced red grapes, which also serve as a garnish.
Awakened One ($8)
The core of this drink is a lemongrass-infused vodka, mixed with Lillet Blanc, fresh ginger and pineapple juice, cilantro, and house sour mix.
Sankey Sour ($8)
Percy Sankey, for whom Percy’s is named, operated Percy’s Men’s Furnishing in the space during Prohibition (and it was quite possibly a speakeasy). The drink named for him is the bar’s take on a whiskey sour, with the Jim Beam bourbon, fresh orange juice, egg whites, house sour mix, and Angostura bitters thrown for a loop by a hit of Aperol.
In the words of the song, parsley, sage, rosemary, and thyme are infused into gin for this herbal cocktail, which is made with fresh watermelon juice, mint, and house sour mix.
Aguacate Grasa ($10)
For this drink, which isn't on the menu quite yet, Peterson smokes de-seeded pasilla peppers, blending them with avocado before mixing in the house sour mix, Cointreau, orange rind oil, and cilantro-infused blanco tequila. Smoked sea salt is sprinkled on top.
Wild One ($9)
In this play on a strawberry margarita, thick strawberry puree is mixed with basil-infused silver tequila, Cointreau, and house sour mix.
Keeping it all in the neighborhood, Dandelion Botanicals, up Ballard Ave from the bar, creates the tinctures that can be added to any drink at no additional cost. Choose from energy, immunity, libido, brain, skin, or female balance. Within are ingredients such as horsetail, gotu kola, and horny goatweed.
Joe Petersen and Kyle Taylor
These cousins were looking to open a bar in Brooklyn when family friends lured them into coming west and opening in Seattle instead.
Seating at Percy's
There's tall bar seating in the center of the long room, and round booths along the wall. Light shines in through the window looking onto the balcony.
Plants hang down from the top of the bar.
