Strawberry Sky ($11)
“We steep strawberries, cilantro, and serrano peppers in vinegar for three days to make the shrub for this drink,” Belanger explained. The bright red liquid is then strained and cooked with sugar to make a syrup. That joins blanco tequila and lime juice for a smoky, spicy cocktail laced with the flavor of fresh strawberries. A bit of agave nectar helps balance the vinegary kick from the tangy shrub.
“I’m a big fan of tiki cocktails, and the tiki era of cocktails,” Belanger explained. This cocktail is made from Appleton V/X Jamaican Rum, bittersweet Gran Classico, rich coconut cream, orgeat, lime, and orange juice.
Pitch Perfect ($11)
“This rides the line between a Sazerac and an Old Fashioned,” Belanger says of the Weller Special Reserve Bourbon-based cocktail. Pierre Ferrand Cognac takes some of the edge off the bourbon. The glass is rinsed with Pernod Absinthe to give the drink an anisey aroma, while heady Rothman & Winter Orchard peach liqueur and spiced Elamakule Tiki Bitters add a warm twist to the cold-weather classic.
Ecto Cooler ($11)
This is a mix of Gordon's Gin, Dolin Dry vermouth, fresh lemon juice, and a sweet and savory kiwi fennel syrup. A spritz of club soda adds effervescence.
Fiery Dame ($11)
“People switch from brown spirits to white spirits now that it’s nice out,” Belanger says of the inspiration for this Pueblo Viejo Blanco blanco tequila-based drink. A splash of Del Maguey Vida mezcal gives the drink smoke and depth, while Velvet Falernum and orgeat contribute a nutty richness and spice. Cocchi Aperitivo Americano Rosa, a fruity aperitif wine with a quinine edge, rounds out the robust spring cocktail.
