The Marrow 75
This variant of the French 75 combines caraway and fennel-scented Bitter Truth Pink Gin with lemon juice and Blanc de Blancs Champagne, garnished with a fresh sage leaf.
Bartender Chris Van Hoy stirs a Spritzle with a natural five-point swizzle stick made from a single piece of wood.
"This cocktail has one of our little jokes in it," says Van Hoy. "We've got a dessert with Goldschlager, and a drink with Rumpleminze." It's mixed with Flor de Caña 7 year rum, Aperol, demerara syrup, and Fee Brothers mint bitters, served over crushed ice with fresh mint.
"We call this one The Bank Robber, because we basically stole the recipe for a Boulevardier and are serving it on Bank street," explained Beverage Director Jill Roberts. The drink is basically a Negroni made with Punt e Mes and Campari, with Bulleit bourbon taking the place of gin.
Miss Roberts' Cobbler
A sweet cider-based cocktail made with Red Jacket Orchard's cider, cognac, pimento dram, and a spoonful of apple butter, garnished with pomegranate seeds.
"We get Kansas stuck in our heads whenever someone orders this one," says Van Hoy. Buffalo Trace's un-aged white dog whiskey is combined with Yellow Chartreuse and a house-made turmeric syrup.
