Kolo Klub (all drinks are $12)
"I hate gender-profiling drinks, but if I did, this would be for the guy who's afraid to admit he likes cocktails. It's bourbon. It's in a butch glass. So yeah, dude, it's pink, but whatever." It's Maker’s Mark shaken with Orchard Cherry Liqueur, raw wildflower honey, fresh lime juice, and egg white. Quite similar to the 'Ward III' at Neff and McCoy's bar of the same name.
"You've got to design your crowd-pleasers, and this is one of ours," said Neff. Zubrowka bison grass vodka with Combier, Aperol, lemon, and apple puree, with sparkling wine to top. "It's a little sweet, a little bitter... once you add Champagne to a drink, they sell by the bucketful. A person could have a lot of these."
Named after a Prague music hall and venue, the Magic Lantern starts from a base of muddled cucumber, with vodka, Pimm’s, and Cocchi Americano; ginger beer finishes it off. "We're not trying to get too impressive with these drinks, but we are trying to lead people just a bit out of their comfort zone."
Grand Street Cocktail
"We had fun shopping around and playing with ingredients we don't always use... we're not trying to be esoteric but we do want to have fun with this." The jumping-off point for Grand Street was raw wildflower honey, which meets pineapple, rye, Gran Classico, and Angostura bitters.
Somewhat similar to a mojito, with white rum, Becherovka, ginger syrup, and mint, finished with soda. "I wanted to name it Plastic People of the Universe, but that took too long to say."
