Gin, Tonic, Amaro

Txakoli from Basque Country certainly, especially Txomin Etxaniz... a funky small-production Sicilian or Austrian Rose... a quality (stress that word here) Lambrusco Secco... Gin muddled with whatever market fruit and fresh herbs I can find... and definitely Orange Wine; find one that's endlessly complex but also shockingly refreshing—like Movia's 'Lunar' from Slovenia or Philippe Bornard's 'Les Marnes' Jura delight. A Few Ideas...
"I always feel like I'm a really boring bartender when it comes to answering these questions about drinks because all the other bartenders here come up with some marvellous, complex, exciting drinks and mine tend to be a lot more straightforward...
As a man of relatively simple tastes< though, there are three drinks I recommend for those hot summer days:
1. Elderflower Champagne
2. Bombay Sapphire and a lot of Schweppes tonic with a squeeze of lime and orange.

Michelada or Dolin Blanc
"To me there is nothing better than a great Michelada on a hot summer day—ice cold, spicy, and since it is fairly low in alcohol, it is the type of drink that you can have several of and not get wasted. Another favorite summer drink of mine is vermouth—and one in particular, Dolin Blanc. I prefer it on the rocks with a twist and sometimes a splash of soda water.
