Reposado tequila, Cynar, black pepper, salt, lime, and housemade red wine syrup make up this amped-up Margarita variation. Vergara loves the depth the drink has thanks to the red wine syrup.
Gypsy Tears ($10)
Gin, rhubarb, Cocchi Americano, and acid phosphate are blended in this clean, spirit-forward cocktail. "Lemon and lime are usually great additions, but adding acid phosphate gives it more body," Vergara said. (Are we sensing an acid phosphate trend?)
Deez Nuts and Berries, $10
A take on a cobbler, tawny port is blended with raspberries, orange, lemon, and vanilla. As for the unforgettable name, Vergara tributes the whole team with the idea. "We were all just laughing, and we figured if a guest sees that and laughs, that'll really set the mood for their night," he said of the slightly sweet and fruity drink.
Pimm's Cup, $9
"This is such a great summer drink," Vergara said of this classic Pimm's Cup, made with Pimm's No. 1, cucumber, orange, and Bundaberg Ginger Beer.
