Gypsy Tears ($10)
Gin, rhubarb, Cocchi Americano, and acid phosphate are blended in this clean, spirit-forward cocktail. "Lemon and lime are usually great additions, but adding acid phosphate gives it more body," Vergara said. (Are we sensing an acid phosphate trend?)
Deez Nuts and Berries, $10
A take on a cobbler, tawny port is blended with raspberries, orange, lemon, and vanilla. As for the unforgettable name, Vergara tributes the whole team with the idea. "We were all just laughing, and we figured if a guest sees that and laughs, that'll really set the mood for their night," he said of the slightly sweet and fruity drink.
Boulevardier Bianc, $11
This oak-aged cocktail is a blend of High West Silver Whiskey, Aperol, and Punt E Mes, mixed together and aged for 4 to 6 weeks. Vergara loves the High West white whiskey for its flavors of "coconut, cotton candy, and dried mango."
Pimm's Cup, $9
"This is such a great summer drink," Vergara said of this classic Pimm's Cup, made with Pimm's No. 1, cucumber, orange, and Bundaberg Ginger Beer.
