Alla Spina, the latest venture from Philadelphia's Marc Vetri, is an Italian gastropub with a serious beer program. They've got twenty taps, two casks, a list of fifty plus bottles as well as a reserve list featuring large format and vintage selections. With a beer list like that and bar food like Poutine with Guinea Hen Leg Bolognese (and Mozzarella Curd) and "Involtini del Muratore," Fried Mortadella with Fontina, we'd be plenty happy, but Alla Spina also has an Italian-accented cocktail program with a heavy focus on beer cocktails and Italian classics.
We sat down with beverage director Steve Wildy to talk about what's going on behind the bar at Alla Spina. All of the beer cocktails on the list are Wildy's creations, taking inspiration from the flavor profiles of unique beers and classic cocktails, bringing them together in a way that heightens both. Wildy sees beer cocktails as a mini pairing.
Alla Spina's beer based cocktails have the advantage of being food friendly, and not over-the-top boozy, giving patrons the chance to try out a few without worrying about the inevitable effects of more high proof tipples.
