Funkwerks Saison, Tropic King, and Brett Dream
Funkwerks (Fort Collins, CO) specializes in brewing Saisons and brought three of their own to the Fest. Their flagship Saison has hints of orange, ginger, and pepper. Tropic King, an Imperial Saison, packs a punch of fruity flavors, while Brett Dream is more on the funky side (in a good way).

Elevation Brewing Company (in Poncha Springs, CO) is already turning some heads just months after opening with their Mount Blanca and Signal de Botrange. Mount Blanca is a golden-colored Saison that smells like lemon, peppercorn, and bread. Signal de Botrange is a Saison fermented with Brettanomyces and aged in Napa Valley Chardonnay barrels.

Sierra Nevada (one of the few non-Colorado breweries at the fest) poured their Ovila Saison, a classic representation of this style with hints of pepper and citrus.

To accompany the beer, the TRiNiTY Brewing kitchen staff fried up these risotto balls, stuffed with Parmesan cheese and sitting in a bright tomato basil sauce.

Old Growth (brewed by TRiNiTY) is a Flemish Inspired Wild Brown that typically ages for 6 to 18 months in oak barrels. This is just one of many beers produced by TRiNiTY that will spend a significant amount of time in oak barrels.

TRiNiTY Brewing Company recently upgraded their brewery from a 4 barrel system to a 12 barrel system. This increased output will allow TRiNiTY to begin selling bottles to local liquor stores and increase keg sales. Bottles of their beer are currently only available at the brewery.
