5 Apple Brandy Cocktails from The PDT Cocktail Book
There's an aura of coolness surrounding PDT. When it opened in 2007, there were only a few speakeasy-style bars in Manhattan: Sasha Petraske's Milk and Honey, Audrey Saunders' Pegu Club...perhaps some would add Angel's Share to the list. But when PDT opened, everyone heard about it: you go into a hot dog stand, and get into the phone booth...
But if you don't have a reservation, or you're not in New York, you can still get a taste of PDT. The new PDT Cocktail Book, officially released November 1, is bound to become the tome tipplers reach for at happy hour—it's chock full of recipes for classic drinks dating back before Prohibition as well as the innovative cocktails created over the years at Jim Meehan's iconic East Village bar.
We asked Meehan to share a few fall drink recipes with us, all featuring apple brandy and applejack. Meehan's a big fan of Laird's Bonded Apple Brandy, an affordable, flavorful local option from America's first commercial distillery. Whether paired with rye whiskey, sloe gin, bright citrus, or maple syrup, this 100-proof spirit, along with Laird's Applejack, offers complex flavor to a wide range of autumnal cocktails. A note about ingredients: All of the recipes in the book list specific brands of spirits so you can recreate the drinks exactly. But Meehan says that not having a certain bottle on hand shouldn't stop you from making a drink—"I wrote the recipes like a pastry chef would," he said, "but I mean these recipes to be used like a jazz musician would use sheet music. You can improvise. Substitutions will result in drinks that taste a little different, but cocktails are able to constantly evolve."
