This is where it gets decadent. You know you're in for it with the scent: musty honey, sunbaked apricots, quince baking in a pie. If you must, serve this wine with roasted parsnips and chicken or squab, but you might wish you'd skipped dinner when the cheese comes out. The rich body of this wine envelopes a stinky cheese (we went with Taleggio, but it's worth exploring further) like dribbling honey on a spoonful of the stuff. Auslese begs us to bring back the cheese course, preferably while we linger by the lake, watching dusk fall. (Occasional exclamations of wow are allowed.)
Honey, candied orange peel, spicy ginger broth, overripe pineapple, Ricola lozenges, hints of beeswax, cinnamon, spiced fragrant Lady apples, and through it all, a vein of smoky minerality. A little more acidity might brighten it nicely, but it's ok to get lost in the fog here, thinking of fruit so ripe it's getting close to rotten, but so juicy and sweet you still lick it off your fingers.
