Make it at home:
4 slices white nectarine
1 Luxardo cherry
Ice
½ ounce fresh lemon juice
½ ounce Sapling maple liqueur (or maple syrup)
1 ½ ounce Laird’s Applejack
splash of champagne
Garnish: three rose petals

Muddle nectarine slices and cherry in cocktail shaker. Fill with ice. Add lemon juice, maple liqueur, and Applejack. Shake well. Strain into chilled martini glass. Top with champagne. Float three rose petals on top.

Williams likes Ballantine's Scotch for this, but recommends anything with a little smokiness to it.

Make it at home:
2 slices doughnut peach
1 Rainier cherry (de-pitted)
Ice
½ ounce fresh lemon juice
¾ ounce simple syrup or a mix of simple syrup and honey syrup
1 ¼ ounce Scotch
splash of ginger beer
Garnish: two Rainier cherries

Muddle peaches and cherry in cocktail shaker. Fill with ice. Add lemon juice, simple syrup, and Scotch to glass. Shake well. Strain into ice-filled glass. Top with ginger beer. Garnish with two cherries.

Twigg calls the allspice dram "bitters on steroids times ten," but this a surprisingly balanced, well-rounded cocktail.

Make it at home:
3 slices ripe apricot
Ice
1 ½ ounce 10 Cane Rum
1/3 ounce Velvet Falernum
½ ounce fresh lime juice
3 drops St. Elizabeth Allspice Dram
Garnish: 2 blackberries

Muddle apricot in cocktail shaker. Fill with ice. Add rum, falernum, lime juice, and allspice dram. Shake well. Strain into ice-filled glass. Garnish with blackberries on toothpick.

This off-menu favorite has a wee bit of a kick at the end from the Tabasco.

Make it at home:
2 peach slices
2 raspberries
5 leaves purple basil
Ice
1 ½ ounces vodka
½ ounce peach schnapps
Splash Tabasco
Splash of soda water
Garnish: blood orange slice

Muddle peaches, raspberries, and basil in cocktail shaker. Fill with ice. Add vodka, schnapps, and Tabasco. Shake well. Add splash of soda water and then pour without straining into ice-filled highball. Garnish with orange slice.
