Sour Cherry Americano
A fruitier take on the Americano, a classic summer drink of bitter Campari, sweet vermouth, and club soda.
Sour Cherries and Chocolate Mint
Good cocktails start with good ingredients. Will starts by adding eight unpitted sour cherries to the bottom of a shaker.
3/4 ounces of lime juice goes in with the cherries.
The cherries and lime juice are carefully muddled to release their juices.
Chocolate Mint Syrup
3/4 ounces of chocolate mint syrup are added to the shaker. Will infuses his syrup with chocolate mint under a powerful vacuum to extract flavor without actually cooking the mint. At home, the easiest way to make the syrup is to just pour the hot simple syrup over a bunch of mint leaves and allow them to steep.
Blue Hill Gin
Two ounces of Blue Hill's own gin is added. Distilled at Comb from honey, it's flavored with sassafras, coriander seed, basil, cardamom, and honeysuckle, along with the traditional juniper and other botanicals.
Luxardo and Punt E Mes
A few aromatic and bitter notes round out the sweet and sour flavors of the cherries and mint. He uses 1/2 an ounce of Punt e Mes and 1/4 ounce of Luxardo Maraschino liqueur.
Ice and Shake
Will shakes the cocktail vigorously for about 10 seconds...
...then tops it off with sparkling water.
The drink is strained into a highball glass then topped up with ice.
A sprig of chocolate mint, slapped to release some of its oils and a single cherry garnish the glass before serving.
