It's Pimm's O'Clock: The Rookie Highball
A couple weeks back I wrote about my love of Pimm's. That love stems from the same part of me that gets obsessed with Monty Python, the Beatles, Douglas Adams, and Karl Pilkington (that'd be the anglophile part). But the problem with Pimm's is that it's indelibly connected with the Pimm's cup, and as much as I like that drink, there's a tiny voice in my head that kinda resents the fact that I enjoy sipping a cocktail flavored with strawberries and consumed at fancy-pants boat races. So I've recently started looking for slightly manlier ways to incorporate Pimm's into my life.
This recipe comes from Chris "Rookie" Stanley, a self-described occasional bartender (most recently of the Clover Club in New York), and a drinks blogger over at Rookie Libations (worth a read!).
In this variant of the classic Scotch and Soda highball, Chris swaps out the Scotch for Irish Whiskey, and subs in a good proportion of Gin-based Pimm's. A dash of lemon juice and Angostura bitters add acidity and complexity to the mix, and ginger ale finishes it off.
Once everybody gets to know each other in the tall glass, the sharp edges of the whiskey and ginger ale are mellowed out by the sweetness of the Pimm's, and the whole thing becomes about as drinkable as you could hope for on a hot summer's day. Its refreshing nature and bubbly texture are about all it has in common with the far fruitier traditional Pimm's cup, and anything cut with whiskey is a good thing in my book.
