Every seasoned mixologist has their take on the classic lime and tequila cocktail but Pegu Club's herbaceous rendition trumps most. Thai basil, Yellow Chartreuse, and a summer garden of herbal notes make one of the more exotic cocktails we tried.

Our favorite Cocktail Week appetizer, these jumbo prawns were perfectly cooked and served with a tasty cashew and garlic refrito. The shells were so delicate that no peeling was required!

Exquisitely balanced, the gin-and-grapefruit based Roselle rises above your average Salty Dog through the addition of house-made hibiscus cordial and fresh lime juice.

Tequila Go-To at Employees Only
Tequila Go-To at Employees Only
We saw elderflower liquor everywhere at cocktail week, but this drink used it with a restraint we appreciated. Muddled cucumber, mint, and lime juice added a refreshing contrast to the Don Julio Blanco tequila and Angostura bitters. Ginger ale made this drink just a touch too sweet for our taste.

Prickly Pear Margarita at Daddy-O
Prickly Pear Margarita at Daddy-O
Instead of featuring exotic infusions or rare liquors, Daddy-O's Prickly Pear Margarita chooses to focus on the quality of a few simple ingredients. Don Julio blanco tequila, prickly pear puree, orange liquor, and fresh lime juice come together in a refreshing take on the classic summer sipper.

Daddy-O Rootbeer Float at Daddy-O
Daddy-O Rootbeer Float at Daddy-O
The Daddy-O Rootbeer Float was the only dessert beverage we were offered in our journey. At its core is Abita root beer, but floating above is a rich combination of Bulleit rye and Coole Swan cream liquor, floated with raspberry liquor, topped with Bulleit-infused whipped cream and garnished with a pretzel rod. Somehow it all came together.
